It is curious how sometimes the dreams that we have not considered, can also come true. This is the case of Vinos Nivel, a great little wine project born by the hands of the incredible Mr. Juan Paredes.
A native of Michoacán, he worked in the fields for family tradition, until one day, that young Juan decided to venture in search of the American dream, so he spent 6 years working in California. In search of a change of scenery and above all, missing his Mexican roots, in 2005 he returned to Mexico. This is how he arrives to Valle de Guadalupe, pursuing new and better opportunities for his life, so pleasant that he assures he never imagined what would be waiting for him.
He was welcomed by the Gregory family to be the butler of their ranch, which today is known as Vena Cava Winery. In that year, Phil -owner and founder- enrolled in the famous “Escuelita del Vino” (Wine School) (Estación de Oficios del Porvenir). Determined to make good wine, he begins to involve Juan in more of the ranch’s activities, the latter becomes his right-hand man and shows great interest in the process. Two years later, Phil encourages his loyal and hard-working collaborator to take the same course. Upon completion of the course, Phil allowed Juan to make his first barrel with total freedom within the Vena Cava space. The result was so good that in 2011, Vinos Nivel was officially born.
It uses grapes from the local valleys, in which each grape, goes through a selection process carried out personally by Juan, in order to offer you the best quality that you can see and taste in each bottle. Currently, it has 5 varieties of labels, including white, rosé and red wines. With prices ranging from $400-$600mxn.
