Omnívoro is a delicious and beautiful concept that with its culinary proposal, seeks to bring haute cuisine to downtown Ensenada.
In April 2020 and in the middle of the pandemic, Omnívoro was born. They began offering rotisserie dishes to order and to take away, due to the conditions at that time. The reason for their success: a roasted chicken like no other, with 48 hours of preparation and extreme care to the product, which captivates everyone who tries it. Two months ago, they opened their dining room, where you can taste a wider menu and the delicious house wine from Viñedos San Rafael (in Ojos Negros), with a choice of red, rosé and white to pair perfectly with their dishes.
We met Andrés -one of the partners- and he told us that although most of the restaurants in the area focus on coastal cuisine, based on seafood, they were inspired by the highlands for their dishes, decoration and brand colors. Believing that the downtown area of the city has a special magic, when they saw that the establishment where they are currently located was available, they rented it immediately. Located on Calle Octava, where there is a lot of culinary activity and close to Plaza Santo Tomás, which has recently positioned itself as the cultural heart of Ensenada’s historic downtown.
With an open kitchen to provide that atmosphere of transparency to it, it is a small restaurant where they bet on the highest quality in their human talent and each product used. You can’t miss the tomato salad, strawberries, watermelon and goat cheese to whet your appetite, the “Matahambre” as a main dish, which is their improved version of suadero, a braised cut bathed in bordelaise sauce and creamy polenta, and to close, the Basque cheesecake with coffee and miso snow. Of course! A glass of wine is a must to make the experience more complete.
We love this kind of places that preserve classic traditions with their own touch and interpretation. Bringing a warm atmosphere, among friends and that bring us closer to great moments to share with its fabulous culinary proposal.
